in Brookfield, 19000 W. Blue Mound Rd., must be a mouse’s idea of

one-third of the store devoted to more than 30 varieties of cheese, low-carb
dieters don’t need to worry about boredom. Brennan’s buys direct from
cheese factories here and abroad, providing an exotic experience to even
the most discriminating palate. The
most popular cheese is the store’s 4-year old cheddar. Cranberry and
blueberry cheddars and maple syrup cheese top the list of unusual
offerings. Each
day, Kathleen Coolman, cheese manager for the Brookfield store, puts out
different samples for customers to try. For the adventurous, there’s
