Better Butterscotch

Butterscotch. It’s not just the flavor of those rock-hard candies your granny keeps in a bowl on her coffee table, next to her plastic-covered couch. Several local chefs have transformed this old-fashioned flavor in delicious new ways. Here are some of our favorites.

Tre Rivali

A budino is basically a thick Italian pudding, but to say it’s a pudding is like calling Michelangelo’s “David” a sculpture. Chef Heather Terhune’s pastry chef roots shine in this so-thick-you-can-stand-a-spoon-up-in-it butterscotch budino. Another great budino can be found on Milwaukee’s East Side at Tess. This one’s served with a drizzle of caramel sauce and a dusting of pink Himalayan salt. 2499 N. Bartlett Ave., (414) 964-8377,


This decadent dish is simply named “butterscotch pot.” And it’s a pot bursting with not just rich butterscotch pudding, but also peanut butter, chocolate and banana. The dish is topped with a crunchy, house-made potato chip too. 415 Genesee St., Delafield, (262) 646-1620,


Want your butterscotch in a pie? Head to Honeypie, where the average pie stands 7 inches tall, and the butterscotch pie is no exception. Milwaukee Chophouse

OK, so this dessert is called a sticky toffee pudding sundae, but the butterscotch hard shell, which covers the pudding, ice cream and fried cashews, is really the star of the dessert. 633 N. Fifth St., (414) 226-2467,

It’s not just a butterscotch cupcake — it’s a butterscotch toffee cheesecake cupcake. Got all that?
