‘Everything is falling into place’
Händen Distillery to open in September

CEDARBURG — Cedarburg will welcome Händen Distillery to its downtown this summer.

The distillery, owned by Kristin and John Padberg, is still under construction but is set to open in September at W62 N590 Washington Ave.

It promises milling, fermentation, blending and bottling areas, along with a lounge and bar area and summer outdoor seating. The operation’s primary focus will be whisky, but vodka, gin and various seasonal spirits will also be offered.

It will operate under a conditional use permit from the city. Microdistilleries also require federal and state permits and must abide by local, state and federal codes, according to city records. John Padberg said they have received those permit approvals.

“Everything is falling into place,” he said. “We’re really excited.”

It was originally approved to occupy the entirety of the Ford Garage building, purchased by local developer Greg Zimmerschied in 2015. However, those plans were scaled back and paired with the furniture consignment shop, Walter’s Loft, that now occupies roughly two-thirds of the property.

“We’ll have a nice tasting room with seasonal cocktails, a changing menu and a nice, comfortable space,” Padberg said earlier this year.

And he isn’t waiting for September to get mashing. He plans to start operating the distillery and making products in July, ahead of the opening.
