Texa-con-sin, a mobile BBQ smokehouse trailer, coming to area

WAUKESHA — The streets of Waukesha will be redolent with the odor of smoked meat when Texa-con-sin, a new mobile barbecue smokehouse trailer, hits the road come January.

The mobile restaurant, owned by Terrance Williams and Todd Lewis, is a 30-foot long trailer with a complete kitchen operation. Williams said he planned to build a brick-and- mortar location in Waukesha; however, when he saw the mobile smokehouse listed for sale in Michigan, he couldn’t help but check it out.

“When I saw that trailer, it looked like it came straight out of a Western novel,” said Williams.

Williams said their premium items include ribs, pulled pork and brisket but they also offer brats, burgers and sausages. He said all meats are smoked and range between $5 and $10.

Williams is a professional chef by trade and has won awards through WTMJ4 as well as radio station WKLH, which hosts the “Sticky Fingers” competition. He’s owned several restaurants and has been in the food service business for over 30 years.

While the mobile BBQ house is not yet operational, Williams said people can expect to see the western-style house on wheels popping up around Waukesha in January.
