Pat’s Rib Place expanding, tripling seating area

WAUKESHA — Alisha Hayes, co-owner of Pat's Rib Place, says much of what her business does comes after customers request it, like their plan to expand the restaurant's dining area and make space for live blues music on weekends.

“We are expanding because the customers have been wanting us to for a long time,” Hayes said. “All our growth has been dictated by the customers. They wanted okra, fried pickles. The reason our menu is the way it is now is solely because of the customers. Same with the expansion. They said ‘Hey, it's time to get a bigger space.’” Hayes and her husband Tydus opened Pat's Rib Place nine years ago and have been operating in a 1,200 square-foot space at 151 E. Sunset Drive in Waukesha. The restaurant — known for authentic Southern-style barbecue — has 23 seats, but that will grow to 78 seats and 2,800 square feet with the new expansion, Hayes said.

The expansion is expected to begin in January after the business next door is able to move to its new location, Hayes said.

The new space has already been designed with a complete floor plan and rendering. It will feature private dining, a live blues space and additional seating, she said.

“We've had a lot of great responses from our customers,” Hayes said. “A lot of excitement.”
