Cedar Crest building addition underway

A crane towers above the new building under construction at Cedar Crest Ice Cream, 7269 Highway 60, in the town of Cedarburg. The 12,491 square-foot structure will double the company’s freezer storage capacity and will cool to 20 degrees below zero. Co-Owner Tim Kohwley said the building is expected to be done in February, but that it will take two weeks to bring the temperature down to negative 20. Doing so more quickly could crack the floor, he said. The company, which bills itself as the inventor of “tracks” in ice cream, offers more than 100 flavors of ice cream.
