Bavette La Boucherie coming to Mequon Public Market

MEQUON — Bavette La Boucherie, a butcher shop already located in Milwaukee’s Third Ward, will be joining Mequon Public Market when it opens later this year, Spur 16’s developer announced Monday.

Bavette La Boucherie is a modern rendition of an old-fashioned neighborhood butcher shop. It sources whole animals raised responsibly on small, local farms and custom cuts all its meat, according to a news release from Spur 16 developer Cindy Shaffer.

In addition, Bavette will feature a restaurant serving these meats on a daily changing menu.

“The restaurant truly is a farm-to-table restaurant, sourcing not only the meat, but most of its produce from nearby farms,” Shaffer added in the news release.

In addition to the seasonal menu, Bavette will feature Wisconsin cheeses, local charcuterie, artisanal jams, pickles, salts, vinegars and oils. Bavette also features barrel-aged cocktails and a variety of wine.

“The decision to open a second location was not an easy one, but I really believed in the vision Spur 16 had for the market,” owner Karen Bell said in the release. “That, along with the presence of other vendors — all of whom I respect enormously — made it an easier decision.

The Mequon location will feature a smoker, which will allow it to diversify many of its products and menu items, including bacon, sausage, hot dogs, land jaegers, smoked brisket and shoulders, the release added.

“We also will have a larger grab-and-go selection than we do in the Third Ward,” said Bell, who noted her parents are Mequon residents.

The 10,000-square-foot Mequon Public Market will be in one of the historic public works buildings along Mequon Road that now are being renovated.
